Featuring 3 white wines: Diamond Collection Sauvignon Blanc 2016 saw California's first rainy winter in years. An ideal amount of precipitation at the beginning of the season was followed by warm spring temperatures a few weeks ahead of schedule. Over the course of the vintage, the grapes matured slowly, developing flavor intensity and optimal balance. Votre Santè Chardonnay Votre Santé Chardonnay has the bright aromas and flavors of pear, peach, quince and honeysuckle. The wine also reveals an appealing minerality that harkens back to Burgundy. Notes of vanilla and nutmeg from oak aging balance the complex varietal character. Enjoy with everything from savory crêpes to mac and cheese. Rosso & Bianco Pinot Grigio Due to consistently warm temperatures, harvest occurred much earlier in the season than normal. As a result, the fruit retained an ideal level of crisp natural acidity to create a very balanced wine with a range of citrus notes. We added Chardonnay to give the wine a little more body, fill out the mid-palate and heighten the complexity and range of flavors and aromas. To preserve the wine's fresh fruit impressions and varietal fragrance we press and ferment cool and then finish in stainless steel rather than wood. The resulting wine has a light body with clean, distinctive character.
