Made with fiberglass mesh reinforced silicone, the mat is heat safe from -40 degrees F to 480 degrees F and designed for all types of ovens. Dough contains about 60-80% water, so when baking with dough it is important to use Silpain because its perforations allow water to seep through the mat, leaving a perfect crusty finish.
