Acid hydrolysis is a process of modifying starch by treatment with a mineral acid and heat at sub-gelatinization temperature leading to changes in its physicochemical properties. Sequel to these changes, there might be changes in the binding, compression and mechanical properties of the starch. Emmanuel Olorunsola’s book titled “Binding and compaction properties of microcrystalline potato starch” gives details of microcrystalline starch production by acid hydrolysis of sweet potato starch; and determination of its physicochemical, binding, compression and mechanical properties and comparing these with those of native sweet potato starch, maize starch B.P. and polyvinyl pyrrolidone in chloroquine tablet formulations. The binding, compression and mechanical properties of the binders were found to be directly related to their physicochemical properties.
