Description 100% Pure Guar Gum Powder (e412) for use in molecular gastronomy. Please note that most of our customers prefer our Perfected Guar Gum®, which does not have the "beany" taste of traditional guar and is prehydrated for easy use. Guar Gum is an all purpose thickener and stabilizer. It hydrates in cold water with high low-shear viscosity but is strongly shear-thinning. Stable at pH range 5-7. It is a better emulsifier than locust bean gum. This gum shows viscosity synergy with xanthan gum.
