Produced with kid and/or lamb rennet paste and aged for a period ranging from a minimum of three months to over a year, it's excellent on its own or on a slice of durum wheat bread, but it also pairs wonderfully with compotes and chutneys.
Try it simply sliced and grilled, or alongside our honey and a glass of sweet or Moscato wine.

DOP or PDO in English stay for PROTECTED DESIGNATION OF ORIGIN. It is assigned by the European Union to the name used to indicate a product that owes its characteristics to its place of origin, and its production, modification and processing occur within that geographical area (referred to by the name of the product itself and coinciding with a place, a region or a country).
Verification of compliance with the production specifications is done by impartial parties recognized by the Ministry of Agricultural, Food and Forestry Policies.
