Compatible with standard test cup and Murphy compensation cup Hot test for maple syrup 1: The syrup should be tested directly from the boiling pan. Do not let the syrup stand or cool. 2: Place the syrup sample in a sample cup at least 8 inches deep. 3. Hold the hydrometer cup on a bucket or your boiling pan and slowly lower the hydrometer into the syrup. Be sure to hold the hydrometer firmly until it floats alone or rests on the bottom of the sample cup. A hydrometer released in a light syrup can hit the bottom of the cup and break the glass. It is a very fragile instrument. 4: The hydrometer should float so that the red line of the upper hot test is uniform with the surface of the liquid. If the red line floats above the surface of the syrup, your sample is too heavy. Add a small amount of hot sap to your syrup to dilute it and test again. Add small amounts at a time so as not to dilute your syrup too much. If the red line is buried in your sample, the syrup is too thin and additional boiling is needed. Cold Test for Maple Syrup 1: The hydrometer is calibrated for a syrup of 68°C (room temperature). Proceed as above, except use the red line of the lower cold test on the hydrometer. 2: Allow some time for the hydrometer to stabilize in the cold syrup and avoid a very narrow cup due to friction.
