The Solera Cream Sherry has a brilliant amber and deep copper hue. With butterscotch and pecan aromas, the sweet salted nut and brown spice aromas carry a complex caramel accent. A sweet entry leads to a rounded, lush, moderately full-bodied palate with a lengthy, flavorful finish. Very well done. Solera Cream Sherry has garnered more awards than any other in our winery's history. St. Julian's Sherry is aged in a Solera system, hence Solera Cream Sherry. Our Solera system was started in 1973 and continues in the same process on a yearly basis. In the Solera process, three stages of barrels are used to create our Solera system. To rack the Solera system, the oldest stage of barrels (stage 3) are emptied half way and then transported back to Paw Paw to be bottled. Stage 3 is then refilled using stage 2 barrels, the second oldest stage. The second stage is now half full, so the first stage, the youngest stage, is used to fill Stage 2. The new wine from the current vintage year is then used to top Stage 1 barrels.
