Sakai Takayuki 8 cm. paring knife made in Japan. The stainless blade is 33 layers Damascus hammered steel with a VG10 core alloy. VG10 is a vandium containing steel. Vanadium adds to wear resistance and hardness. This allows the blade to have a very sharp edge. HRC 60. Handle is desertwood.
