This fluted wheel is used to make the familiar ruffled edges of lasagne, ravioli, and farfalle (butterfly-shaped pasta), or to spruce up the lattice strips on top of a crostata di ricotta (cheese tart). This pastry wheel by Ghidini has a 1.5 inch diameter wheel and is 6.5 inches in length. Chrome with wood handle. Made in Italy.
