Available with fixed or removable bottoms, the light-color metal forms allow for the prolonged baking of heavier fillings without overbrowning dough. The decorative flutes also serve a purpose as they help create a thicker border that increases the shell's ability to hold contents. To extend the lifespan of a tin mold, wash with a soft sponge and warm, soapy water. Dry immediately to avoid rusting.
