Svanetian Salt is a salt seasoning mixed with herbs that originate in Svaneti, a high-elevation mountainous region located in the Greater Caucasus. This remote region remained accessible only by foot until the mid-20th century. Isolated from mainland Georgia, salt was a precious commodity in Svaneti; a limited flow of goods into the region made the preservation of food with salt that much more important. In order to stretch their reserves, the Svans mixed salt with coriander, blue fenugreek, marigold, garlic, red pepper, and wild caraway, and thus created the wonder of Svanetian salt.
