About Alto-Shaam 767-SK Cook And Hold Smoker Oven

This Alto-Shaam 767-SK cook and hold smoker oven uses real wood chips to give meat, fish and poultry an authentic smoky flavor. Utilizing a Halo Heat System that uses less energy than conventional ovens, the EcoSmart oven provides consistent, radiant heat. This means there are no hot or cold spots inside the oven, which reduces product shrinkage, yields moister food, and ensures everything is cooked evenly.  Equipped with a smoke timer that lets you choose between a mild, medium, or heavy smoke flavor, this single-compartment oven tenderizes meat by inducing natural enzyme action. The electric unit is capable of cold smoking food and comes with (2) removable, non-magnetic stainless steel side racks that boast (11) pan positions spaced on 1-3/8" centers.  Boasting easy-to-use controls like an on/off switch and temperature knob, the unit also has exterior indicator lights and a timer. Its front-mounted stainless steel drip tray absorbs grease and ensures kitchen cleanliness. Made with a durable 20-gauge stainless steel exterior, this 240V oven is designed for long-term commercial use. The unit features an exterior digital temperature display and bottom-mounted 3.5" casters that enable effortless mobility. Its cooking temperature ranges from 200-325°F, and its holding temperature from 60-205°F.  This stackable smoker has a 100 lb. capacity and can hold (9) 12" x 20" x 2-1/2" pans. The unit features two chrome-plated side racks that are spaced at 2-15/16" centers. Measuring 26-5/8"W x 31-5/8"D x 33-3/8"H, this Alto-Shaam 767-SK cook and hold smoker oven also comes with (2) stainless steel wire shelves, a stainless steel rib rack, wood chip container, and stainless steel drip pan.
